Easy Mushroom Pie

Thyme, oregano, nutty mushrooms and Parmesan cheese: a delicious combination at the heart of this easy mushroom pie. We used ready-made puff pastry, so making the filling is all you need to do.

Oregano (Origanum Vulgare) is typical for the Mediterranean cuisine. The leaves have an intense, earthy, slightly bitter taste. Use it when making tomato sauce, grilled vegetables or a lamb stew. Dried oregano is nearly as tasty as fresh oregano. When buying fresh oregano, make sure you’re not buying marjoram (Origanum Majorana) because its flavour is less intense and a bit sweet. To add to the confusion: oregano is also called wild marjoram whereas marjoram is called sweet marjoram.

Wine Pairing

We enjoyed our easy mushroom pie with a glass of Bardolino, made by Monte del Frà from Italy. The grapes used are Corvina, Rondinella and Molinara. It is a well-balanced, vibrant ruby red wine with lots of fruit and a hint of spices. Medium acidity. In general, you’re looking for a refreshing red wine with lots of fruit that should be served slightly chilled.

What You Need
  • 200 grams of firm Mushrooms, we used small Eryngii
  • 50 grams of Pancetta
  • 3 Eggs
  • 50 grams of Crème Fraîche
  • Parmesan Cheese
  • Thyme
  • Oregano
  • Shallot
  • 2 cloves of Garlic
  • Puff Pastry
  • Olive Oil
What You Do
  1. Warm a skillet
  2. Chop the shallot, the garlic and the oregano
  3. Clean the mushrooms and slice in two if so required
  4. Add some olive oil to the pan
  5. Add slices of pancetta
  6. Fry until crispy
  7. Transfer to a plate with kitchen paper
  8. Add the shallot to the pan and fry on low heat
  9. After a few minutes add the mushrooms and fry over medium heat
  10. After a few minutes add the garlic
  11. Reduce heat
  12. When all nicely done, add the thyme and the chopped oregano
  13. Set aside and let cool
  14. Preheat your oven to 180 °C or 355 °F
  15. Whisk the three eggs
  16. Add crème fraiche
  17. Add freshly grated Parmesan cheese and black pepper
  18. Cut or crumble the pancetta and add to the mushroom mixture
  19. Add the mushroom mixture to the egg mixture, combine
  20. Coat a 19 cm or 7.5-inch round baking tin with thin puff pastry
  21. Add the mixture and distribute evenly
  22. Transfer to the oven for 20-25 minutes or until nice and golden
  23. Allow to cool on a wire rack for a few minutes
  24. Remove from the tin as soon as possible
  25. If the bottom is not done, then transfer back to the oven (without the tin) for 10 minutes and set your oven to 160 °C or 320 °F, lower heat only
  26. Let cool and enjoy at 65 °C or 150 °F

Zucchini with Oregano and Parmesan Cheese

Recently a friend who lives in Liguria, north-western Italy, gave us a Trombetta d’Albenga. This is a zucchini, shaped like an antique trumpet. What makes it interesting is related to its shape: the seeds of this kind of zucchini are in the bell of the trumpet only, meaning that most of the zucchini is free of seeds. Which makes it ideal for a salad or for frying, especially when it’s young. Older trombettas tend to be yellowish and firmer; more pumpkin-like.

It’s wonderful to prepare this starter with Trombetta d’Albenga, however they are hard to find outside of Liguria, so we prepared this dish both with a trombetta and with a young normal zucchini. The trombetta is firmer and its taste creamier, nevertheless in both cases it’s a healthy, very tasty, vegetarian starter, one to share and enjoy with friends. It’s crunchy, salty, full of flavours, soft and slightly bitter.

Wine Pairing

The most popular grape in Liguria is Vermentino, which is used to produce white wines. Don’t worry if you can’t find a wine made with vermentino. In general a glass of rosé or white wine will be nice with the zucchini, provided the wine is fresh, with a touch of acidity and notes of citrus or green apples.

What You Need
  • One Trombetta or Young Zucchini
  • Breadcrumbs or Panko
  • Dried Oregano
  • Parmesan Cheese
  • Olive Oil
What You Do
  1. Wash and slice the vegetable
  2. If using a zucchini, drizzle with salt and mix. Let the mixture rest for two hours, allowing for the zucchini to lose water and become firm. Best way to do this, is by putting the zucchini in a sieve and let it rest above a bowl. Wash the zucchini
  3. If the dried oregano is not very fine, then use a kitchen knife to make the dried leaves smaller
  4. Mix breadcrumbs or panko with a generous amount of freshly grated Parmesan cheese and Oregano
  5. Heat a non-stick pan with olive oil
  6. Coat the slices of zucchini with the mixture and fry quickly until golden
  7. When ready, leave for a minute or two and serve the trombetta warm.

Field Peas with Summer Savory

Seasonal products, we simply love them! Fresh field peas are available for a few weeks in June and July only. They are easy to recognise by their purple pod. An old and forgotten vegetable, perhaps because the (older) peas tend to be starchy and not very tasteful.
Young field peas, however, are sweet and moist with a good texture. Combining them with summer savory is a great idea, but if you want to give your field peas a more modern twist, then replace the savory with fresh oregano.
Field peas, different from fresh green peas, require some fat or oil. The combination with for instance crispy fried pork belly works really well. Simple, a bit old fashioned and delicious.

Wine Pairing

We combined our field peas with pork fillet. The dish is robust, so we decided to drink a red wine from the Dão region in Portugal, to be more precise we enjoyed a glass of Prunus as produced by Gotawine. One of our favourites! It has lots of dark fruit (plums, blackberries, cherries), it is lightly oaked and its taste is fruity, long and well balanced. Grapes include Jaen (also known as Menci), Tempranillo and Touriga Nacional. In general you’re looking for a medium bodied, not too complex, yet elegant red wine.

What You Need

  • Fresh Field Peas
  • Sprigs of Summer Savory
  • Olive Oil

What You Do

Shell the peas and steam them for 4 minutes maximum. Let cool and set aside. Heat a small skillet, add olive oil, reduce heat and very gently fry the peas. Add some finely chopped summer savory. Mix. Just before serving add the remaining chopped savory, mix and serve.

If you combine the field peas with pork fillet, then use excellent organic fillet only. Fry the fillet in a heavy iron skillet until nearly done. Wrap in foil and leave to rest for 10 minutes. Add the meat juices to the pan, add some mustard and (vegetable, veal or chicken) stock. Reduce. Add some cold water to help the emulsification. Slice the fillet. It should be a touch pink. Serve with some black pepper and the jus.

Chicken with Fresh Oregano

Thyme, Oregano, Basil, Rosemary, Saffron, Sage: all powerful Mediterranean herbs. Oregano, or Wild Marjoram, is an interesting one. Probably best known as the herbal ingredient of pizza. A dried herb, one to store in a jar, forget about and then use beyond its ‘use-by date’ and be disappointed.
Such a pity because fresh oregano is aromatic, slightly bitter, pungent and perhaps chemical, depending on the variety, of course. Great to combine with lamb, a tomato salad, grilled fish and of course chicken. It’s also great to flavour olive oil with oregano. So ask your supermarket or local greengrocer for fresh oregano!

Wine Pairing

We enjoyed our chicken and oregano with a glass of Rioja Paternina Reserva 2015 produced by Marques de la Concordia. Reserva means that the wine ages for a minimum of 3 years, with at least 1 year in oak barrels. The grapes are tempranillo, mazuelo and garnacha; very typical for Rioja. It’s a powerful, full-bodied red wine with aromas of black cherries and touch of vanilla and various spices. The wine goes very well with the velvety chicken and the very present flavours of the oregano.

What You Need

  • Chicken Thighs
  • Olive Oil
  • Black Pepper
  • Chicken Stock
  • Lots of Fresh Oregano

What You Do

Halve the thighs, heat a heavy iron skillet, add olive oil and quickly fry the meat on all sides. Reduce the heat and add two third of the chopped oregano. Keep on low to medium heat for 10 minutes or so. Add some chicken stock, just to deglaze the pan. You will notice that the juices becomes green thanks to the oregano, so please coat the meat with the cooking liquid. Just before serving add the remaining oregano, some freshly ground black pepper and mix.
Serve with green beans, cooked in water with fresh garlic, wrapped in pancetta (after having grated some nutmeg over the beans) and then fried for 5 minutes in some olive oil.
